Tarragon Risotto with Veal Meatballs

When Life gives you Lemons…

This week in kimmyscucina we are going to feature some recipes with lemon as an ingredient.

Roger and I went crazy in the kitchen Saturday.   We had some fun preparing a variety of pasta dishes and a dessert that we are so excited to share with you.  Thankfully we had some help to test out all the recipes.  Although we could have had an army for all the food we made.

I was thinking about life as I was writing this post and it is hard not to think about all the ups and downs we face.

For our family, as mentioned before, we are in so many transitions.  And although we are there to guide them in these transitions, it is up to them to make final decisions.  This made me think about many years ago when the kids were all still little and so dependent on us.

Their needs as small children were so basic and seemed so much easier.  Now don’t get me wrong, there were still big issues at times.  I have to admit, there were definitely big moments in the kid’s lives that were missed  because of being distracted by life.  All you moms and dads can related to some days where you are trying to just get their basic needs taken care of.

For our family, the “lemons” we were handed when the kids were little seemed so much easier to “make lemonade with” than the “lemons” we deal with now.  We pray each day for our children and the decisions that they will make.  We trust that God is in control and there is a purpose to all that they face.

The one thing I have learned over the years is, my dependence on God, and my faith and trust to know that as life gets crazy with events and decisions that are made, I am trusting…

…Now let’s get on with our recipe.

Our Risotto with Veal Meatballs is a refreshing dish that is a meal all in itself.  The lemon in this dish adds such great flavor, you will LOVE IT!

If you have never made risotto before you are going to love this dish!  Just remember that you need to be attentive as it is cooking so it does not dry out.

The other thing about risotto is that it is so versatile.  There are so many combinations that you can put together that are amazing.  (Sundried Tomatoes and Goat Cheese or Asparagus and Parmesan for a few examples)

Risotto with Veal Meatballs
  1. Mix all the ingredients for the Meatballs. Form small meatballs and place on a sheet coated with olive oil and bake at 350 for 25-35 minutes.
  2. In a saute pan add enough olive oil to coat the bottom and heat, toss in the arborio rice, lemon juice and the garlic, stir constantly until rice JUST begins to brown.
  3. Add Tarragon, Red Pepper Flakes and Salt & Pepper and stir
  4. Turn heat down and add Liquid 1 cup at a time, continuing to stir constantly, as liquid is absorbed add more liquid 1 cup at a time. Continue this process until the rice is cooked. (About 20-30 minutes). Add lemon zest as the rice is almost finished.
  5. While the risotto is cooking in a sauce pan put all the ingredients for the Cream sauce. Bring to a rapid boil and cook down until it is thickened. Sauce will be a light brown color.
  6. When risotto is done, place in serving platter and add meatballs. Top with cream sauce and serve.
