Scones with Raspberries, Peaches and Blackberries

We are always cooking at kimmyscucina.  We love to try out new recipes and maybe even put a twist on some old ones.  Our Scones and Lemon Curd are an example of the latter, we are using our Easy Buttermilk Biscuit Recipe and adding some fruit and making them into scones instead of biscuits.  I know you will love it!

We are calling them Scones although you will notice they are a bit on the “thin” side.  All I can say is you will take one bite and not be able to stop!!!

VERSATILE BISCUIT RECIPE

Today we are going to talk about some DELICIOUS Scones.

We are using our Easy Buttermilk Biscuit Recipe (get link here) and changing it up a bit.  We love this Biscuit Recipe, it is so versatile and can be adapted to a sweet or savory recipe.

LEMON CURD

We are pairing the Scones with a delicious Lemon Curd that compliments it perfectly.  If you would like to prepare this Lemon Curd a day or two ahead that works well.

Scones with Peaches, Raspberries and Blackberries with Lemon Curd

Instructions
  1. Prepare Biscuits according to the Recipe
  2. Mix Berries in a bowl and if they are too tart you can sprinkle them with a little sugar.
  3. Add Berries and flour 1/4 cup at a time to get a workable dough
  4. Gently "Fold" in the berries by hand
  5. Flatten out Dough and Cut into Triangles. Brush with some cream and sugar
  6. In a Double Boiler Add the Egg Yolks and Sugar
  7. Whisk together and slowly add the Lemon Juice
  8. Continuously Whisk as mixture heats up and becomes thickened
  9. Put in a bowl and store in the refrigerator.
