Quick Shrimp with Rice Noodles

Let this Crazy Day Begin

As you are reading this post, you are probably about to rush out the door to begin this busy day.  Maybe the last few days have been a bit crazy and you are just tired and out of dinner ideas.

Easy Dinner Tonight

Well, let me help you with an easy dinner idea tonight.  It will only take you a few minutes to throw together and it is one of those meals that can be all in one pan if you want.

Now, I know that it is shrimp and that is far from an economical item to make for your family for a weeknight.  So, if you want, you can substitute some chicken instead.  Cut up a few chicken breasts or boneless chicken thighs and you are good to go.

Fish Sauce…

When you look at the list of ingredients, please do not be scared by “fish sauce”.  We have talked about this in another post ( and I would just like to say again, this does not make your dish “fishy”.  It will enhance the flavors in some incredible ways!!! So give it a try!!

This dish is so versatile, you can add veggies (broccoli and/or carrots). This is a great dish the next day after the flavors have absorbed. This would also make a great cold salad the next day for lunch.

Remember, dinner doesn’t always have to be overwhelming and complicated.  So tonight, keep is simple! There you go, Dinner has been decided!!!!

Quick Shrimp with Rice Noodles
  1. In a sauté pan cover bottom with olive oil and a drizzle of sesame oil.
  2. Add scallions and shrimp and sauté until shrimp just about done.
  3. Add noodles (cooked) and toss around to heat, add liquid and continue to toss until shrimp is cooked through and noodles are heated. Always remember, you can add more liquid if this is not enough for you!
  4. Serve in bowls.
