Pasta with Spinach and Mushrooms

QUICK AND EASY PASTA

Want a quick easy pasta dish to accompany that steak you are going to throw on the grill?

You are going to want to try this one!  Simple and Easy!

I love mushrooms!  I am not sure how you feel about them, but I love them!  Add some spinach and cream and you really cannot go wrong.

We are always searching for ideas for dinner that we can throw together rather easily without too much thought or too many steps.

Our pasta today can be as casual as a dish for a weeknight meal or you can serve it for a party!

The light cream sauce is not too heavy but adds a bit of depth to the flavor and will make your taste buds HAPPY HAPPY!

As the weather is warm and we are spending so much more time outside this is another reason this dish is great.  If you are throwing something on the grill, it will go with just about anything.  I mentioned a steak but really anything would pair well with this pasta!

I am thinking as I am writing this that you could also grill some shrimp and throw them in and have a one dish meal!! Okay now I am starving!!!

You can make a quick salad to go with this meal or just leave it as meat and pasta and you will be all set.  Enjoy!

Pasta with Spinach and Mushrooms

Instructions
  1. In a saute pan melt the butter and add the olive oil.
  2. Add the mushrooms and cook for a few minutes. Add Italian Seasoning and continue to cook until nicely browned, and remove from pan leaving any oil/butter that may be left.
  3. Add the onions to pan. You may need to add some additional olive oil, saute onions until soft and just beginning to brown.
  4. Add mushrooms back to pan.
  5. Add chicken broth 1/2 cup at first and "deglaze" the pan.
  6. Add spinach and cover for a few minutes to wilt the spinach.
  7. Then add the cream and more chicken broth if desired.
  8. Season with Salt and Pepper
  9. Boil Pasta and combine all together. (You can also reserve some of the pasta water if you need to thin down your sauce some more).
