Orecchiette Pasta with Basil, Lime and Pistachios

Refreshing Dish for a Refreshing Weekend

The amount of things you can do with a pasta dish are ENDLESS!

Today we are going to talk about a QUICK, REFRESHING pasta dish that you are going to love!

We had a great weekend trying out some new recipes and to taste test, we had some family to help us!  What a great way to spend the weekend…food and family.

BIRTHDAYS…

We were also lucky enough to have Zach home for his birthday this year.

He has just graduated from college and is home for a little bit.  Over the past 3 years he has been away for summer baseball and we have not been with him to celebrate his birthday, so it was so nice to have him with us this year.

We traveled up to camp where 2 of our girls are working this summer so we could have most of the family together to have some cake for Zach (we missed Olivia who had to work).

Then headed home where we made dinner for Zach.  His request was lobster, shrimp scampi, asparagus and Caesar salad.

Was a great day!

OUR PASTA FOR TODAY…

One of the pasta dishes that we wanted to try was just a simple dish with some great depth of flavor.

You will love the “refreshing” feel you get from the lime and the combination with the basil is perfect!  Add the pistachios and it is perfection!  We used an Orecchiette (which means “small ears”) pasta and its shape catches some of the sauce and a pistachio, a great pasta choice for this dish.

If you are looking for a quick dish that can be a weeknight or “company” dish THIS IS IT!

We accompanied it with a nice thick grilled Rib eye Steak that Roger sliced up.  We added some roasted garlic and grilled zucchini and summer squash.  Oh and we also threw in a grilled romaine salad as well.  A perfect meal to enjoy some great company and some beautiful weather outside!

Instructions
  1. In a frying pan put olive oil, garlic and basil and let sit for 30 minutes.
  2. Boil pasta
  3. Slowly heat olive oil until garlic begins to "sizzle".
  4. Add lime juice.
  5. Drain pasta ad put in a serving bowl, add olive oil mixture, parmesan cheese, lime zest and pistachios and serve.
