Imagine some warm steaming mashed potatoes and crunchy green beans….YUMMMMMM

This recipe is a favorite in our family.  It was one of my first posts for this blog back quite a few months ago.  Today we are posting it in the recipe form and with some pictures.

Our meatloaf recipe is pretty much the same as our meatball recipe but without the added cheese in the mixture.  So if you want a good meatball recipe, throw some Parmesan in and have at it…


The fun of this meatloaf recipe is all the various ways you can go with it.  Stick with the classic or tailor it to what your family likes.  Maybe add another kind of cheese.  You will notice in this recipe I say mozzarella, but in the pictures we used provolone.  The sky is the limit…

Always remember this is a quick and easy dinner that you can throw together pretty quickly and it is always great for leftovers!

If you are in a real hurry and don’t want to peel potatoes, maybe some red skinned mashed or roasted to make prep even quicker.

I hope you enjoy the twist on this classic! We will never make meatloaf any other way, because this is such a family favorite.

Kimmy’s Meatloaf
  1. Mix all meatloaf ingredients together then flatten out and spread stuffing ingredients roll up jelly roll style and place on a baking sheet or in a baking pan and bake in 350 degree oven for 40-50 minutes depending on your oven.
Recipe Notes

*Variations: You can soak your bread crumbs in some red wine for a little more flavor. Also you can substitute ham and spinach for prosciutto or pepperoni with the mozzarella. You can also use any cheese you would like… **Add a cup of Parmesan cheese to the meatloaf mix and you have a good meatball mix as well…this is a good way to make dinners for a few nights all at once!!
