Chicken Chili

For many of us these last few days have been so nice out we are probably thinking of firing up the grill…oh well, today’s recipe won’t help you with that one.

But here is a great quick one pot dinner if you are in a hurry and don’t have a lot of time to prepare.  A rotisserie chicken is also an option if you don’t have much time.  Throw together a batch of buttermilk biscuits and you are all set.

You can also make this in the morning and throw it in the crock pot for the day to simmer away.  With this chili the longer it sits the more the flavors will come to life.

Chicken Chili
  1. • In a stockpot add olive oil to cover bottom and add onion and garlic and sauté.
  2. • Add chicken and brown well.
  3. • Drain cans of beans and take one can and mash them well.
  4. • Add broth, corn, mashed and whole beans and chilies.
  5. • Bring to a boil and then add cilantro, cumin and chili powder turn to low and simmer until chicken is cooked through.
  6. • Serve in a bowl with a wedge of lime and a scoop of sour cream.
