Angel Hair with Roasted Tomatoes

Here at kimmyscucina we talk about food and life.  We always talk about food and sometimes we talk about life.  Sometimes life is calm and sometimes it is crazy but either way some days it is nice to share our experiences and thoughts and hopefully you are able to relate in some way.

Let’s Talk about Food…

Today we are going to just talk about food.  A “light” quick side dish that is easy to prepare and can accompany almost anything.  If some nights you like to go without a meat, then this would be a great dish to prepare with a salad and call it a night!  So grab a cup of coffee or a glass of wine (depending on when you are reading this) and get your shopping list ready!  Not too much to grab, you might even have all the ingredients to throw this quick meal together.

We don’t have too many pictures today, but we do have a few of the finished product!  Believe me when I say it is easy and you can do it!!  Enjoy!

Angel Hair with Roasted Tomatoes
  1. Toss tomatoes and onions in olive oil to coat. Add italian seasoning and salt and pepper. Put on baking sheet and roast in the oven at 350 degrees for 40-45 minutes turning so tomatoes do not get too crispy. (Depending on oven heat you may need to cut this time down). You want them to be crispy but not burned.
  2. Boil Angel Hair and reserve some of the pasta water.
  3. Mix it all together in a serving bowl, add the lemon zest, some olive oil and pasta water as needed so pasta is not too dry.
