Wanted: Flavor


It seems like many times when I eat anymore, I begin to wonder if I am getting older and my taste buds are just losing it….

But, it occurred to me the other day, it’s not me it’s the quality of so many foods.  It seems like food has just lost it’s brilliance and robustness of flavor.

This was our discussion the other night as we sat down to dinner.  I made a Sausage Flatbread and Endive and Radish Salad with Burrata.

Sausage Flatbread

For the Flatbread, I roasted some onions and Saddleberk Brand sausages (we love this brand, the sausage IS flavorful and delicious.  They also make a great breakfast sausage). Then sliced the sausages thin lengthwise.

Next as I was thinking about what to put down as my “first” layer I had some cream cheese/blue cheese mixture left from stuffing my olives so I thought maybe I will put that as my base on the flatbread.  I finished the Flatbread by sprinkling it with some Parmesan.

Endive and Radish Salad with Burrata

For our salad it was pretty simple I laid out the Endive, sliced radishes and burrata and then drizzled with olive oil, balsamic, salt & pepper and some Parmesan. Simple but perfect!

HINT – for added flavor on your flatbread, put some of the burrata on top…YUM!!!

As we were eating it occurred to me how much flavor was lacking from this meal.  A meal that should have been loaded with amazing flavors was somehow lacking so much.  The sausage was perfect it tasted amazing, but we you would never know that there was blue cheese on this.  The radishes were lackluster and really without much flavor.

So why do you think our radishes have lost their robustness, our celery that crisp crunch or that bite to our blue cheese?

Remember when we would bit into a tomato and it would burst with flavor in your mouth.

I don’t have the answer, I have ideas, but no real answers.  Until then we will continue to seek new flavors and new accents and enjoy the ones we can still love.

By the way, we determined Wine is still really flavorful…
