We are thankful for a Risen Savior who is alive and who has redeemed us!!!
It was a good day at kimmyscucina. The house was filled and crazy for most of the day. We had just beautiful weather, even though rain was in the forecast, it held off.
Kids had a fun Easter Egg Hunt, something we have not done in our house for a few years.
Even as I write this post the girls, Shane and Dan are outside throwing the frisbee around and having some fun together.
We even had a nice fire going in the early evening, which was a great time to get rid of that huge pile of sticks we had from the yard.
I hope that where ever you were yesterday you were able to find some happiness and warmth in your day.
So on to the food…

A Crown Pork Roast
Which we “deconstructed” because we had 2 and wanted to fit them in the pans…
Raspberry Jalapeno Sauce
Recipe to follow in a future post….was such a great accompaniment to the pork! and we even tried it on the cheesecake.
Hasselback Potatoes with Rosemary Truffle Oil
I rolled them in a mixture of butter, olive oil, rosemary, truffle oil and salt & pepper and them baked them. When they were almost done I sprinkled them with some breadcrumbs and more of the butter/oil mixture.
It was the girls request that I make roasted carrots, so here they are (pre-roasting). I just roasted them with some olive oil and salt & pepper and actually sprinkled on some brown sugar as well. Roasted in the oven they get nice and crispy.
Tracy made a yummy creamed spinach with bacon…sorry we didn’t get a picture.
Salad with Mandarin Oranges, Celery, Red Onions and some Almonds and Craisins
Rebecca made a great salad!!! Was so good and she left the extra that we didn’t use, so we will probably be making it again this week for dinner.
Desserts included a few Cheesecakes, Chocolate Cupcakes and some leftover Dairy Queen Ice Cream Cake (Hannah’s Birthday Cake).
I don’t have any pictures of the desserts, sorry, I think I was so involved in wanting to try them, I forgot. So use your imagination.
