How about an easy salad or side dish to any meal…well here you go.
When I was doing these tomatoes Olivia was right there helping me and more than willing to taste test them! I actually think she used the leftover filling and filled her own tomato for lunch the next day.
I always love these flavors together! When you use balsamic and goat cheese you know it is going to be so good!!!
You are going to want to get tomatoes that are not too soft or mushy! This will make your job of hollowing them out so much easier. Also, if you make the filling ahead and chill it this will meld the flavors together so nicely! The filling is great left over, your peppers may soften up a bit, but I am sure you will still enjoy it!
Kale and Quinoa Stuffed Tomato
½ cup Kale chopped small
¼ Red Pepper cut in pieces
2T Shallot chopped small
¼ cup Balsamic Vinegar
Kosher Salt and Pepper
½ cup cooked Quinoa
¼ cup Goat Cheese
2 large tomatoes tops cut off and hollowed out
- Add all ingredients but the tomatoes.
- Chill filling ingredients for a few hours.
- Fill tomatoes and you are ready to go.
