Today we are featuring a recipe from my sister, April. She is coming up with some healthier options for menus and made this one that she and her family love!
Because we are so far away from each other (9 hours) we will not get to share this meal together any time soon, but hopefully on day we will.
I love that she uses small cubanelle peppers, the smaller peppers give you so much more flavor in each bite! A great substitute for these peppers is that instead of rice she uses broccoli/cauliflower rice. Now I am not sure if you live near any stores that will sell it this way, but you can easily make your own.

April’s Stuffed Peppers
1 lb lean ground beef
1 clove garlic-minced
¾-1 cup broccoli/cauliflower rice
Worcestershire sauce (a couple of shakes)
Olive Oil to drizzle on top
Peppers to Stuff
350 for 20 minutes covered, flip and uncover cook another 15-20 minutes
- Mix all the ingredients together.
- Clean and stuff the peppers.
- How EASY is that????!!!!!
These peppers freeze really well so make extra and put some away for another meal!
