Today friends we are going to talk about a REALLY EASY MEAL!!!!
Here is a great choice for dinner that does not require many ingredients and can be made pretty fast!!
We spend a day or two every August making many, many jars of sauce (or gravy if you choose to call it that), so we always have this on hand for a quick meal. This is a good one to keep in the back of your mind for those nights when you just can’t figure out what to do…
2 lbs whole milk ricotta
2T chopped parsley
½ cup parmesan cheese
½ cup mozzarella
Pasta of your choice, I like ziti, penne or rigatoni
Tomato Sauce (1 jar or 2-3 cups of your own)
Additional Parmesan and Mozzarella cheese to sprinkle on top
- Mix all the ingredients for the cheese set aside
- Boil pasta, cook to “al dente” still just a little sticky because it is going to be cooked in the sauce and cheese so we don’t want it too mushy.
- Drain Pasta
- Mix pasta in with cheese mixture and sauce (enough so that as pasta cooks it will absorb sauce but you don’t want it to dry out, so it can be almost “too much” sauce).
- Put in baking dish and bake in 350 oven for 25-30 minutes.
If you want some meat with this dish serve with a side of Italian Sausages baked in oven or some meatballs. Accompanied by a salad and you are all set.
