Winning Chicken Fettuccine

Over the years, raising kids participating in sports, we have hosted many “team meals”. One of the favorites is Chicken Fettuccine. It is definitely a crowd pleaser and you can serve it with a salad and some bread (the kids always loved bread sticks) and you are all set for the evening! Not sure if you are hosting a get together tonight or this weekend but give this a try! The sauce can be made in a larger quantity and put aside for another night as well! Or just use the extra to put on the leftovers.


Chicken Fettuccine (This serves 4-6)


2-3 large chicken breasts

Olive Oil

Kosher Salt

Fresh ground Black Pepper (I LOVE fresh ground black pepper and it is in everything I make!!!)

Drizzle with olive oil and salt and pepper and bake in oven then slice/cut to desired size and set aside…(save juice, and give chicken a bath, use desired amount when adding to the pasta).

1 lb of fettuccine or desired pasta…


Have boiling pot of water ready to go and throw in pasta when ready. The sauce and chicken can be done ahead of time and just kept warm while you are waiting to finish up.


For the Sauce:

3 Tablespoons Butter

3 Tablespoons Flour

1 ½ cups milk

1 8 oz block of cream cheese

¾ cup parmigiano cheese (1/2 cup for sauce and ¼ cup to sprinkle on top, and any extra to serve with if you would like)

Kosher Salt and Fresh Ground Black Pepper


Melt butter in a saucepan over medium heat, whisk in the flour until all incorporated then slowly add your milk (or whatever liquid you are using). Continue whisking until you have a smooth sauce, bring to a boil but continue to whisk so it does not stick to bottom of pan. Once you have brought the mixture to a boil turn down heat to low and add the cream cheese (you probably want to add in pieces, not entire block all at once. Keep stirring until cheese has melted and if it is too thick add some more liquid to your desired consistency…add parmigiano and you are all set.




  • Shrimp instead of Chicken (to “dress” it up)
  • Chicken Broth for Milk (for lighter sauce)
  • Whipping Cream or Half and Half combined with milk to make a richer sauce

    1. Hi Cherri! Bake the chicken at 350 for 40-45 minutes (depending on your oven, if you use convection it may be a bit shorter). Also I am working on the pictures…sorry I will post with pics in future!! Thanks for reading!! 🙂
